French Toast is one of my favourite ready-in-under-a-half-hour meals. Paired with fruit and/or vegan yogurt it’s a healthy, no-fuss, and no-drama meal which is always a win-win.
A few weekends ago on a Saturday afternoon after a bustling day getting the kids to swimming and athletics lessons, I was eager to make a quick lunch so that we could get a few errands done later that day. French toast popped into my mind (it had been quite a while) and I decided it was time to figure out once and for all if vegan french toast could “cut it” with the kids.
With Earth Island®/Follow Your Heart® VeganEgg™ and the Thermomix in hand this was undeniably a simple, speedy recipe. I still remember Eliam’s smile after taking his first bite — I instantly knew I had a “winner” on the table. Paired with our Home Style Fries or our Smashbrown and some seasonal fruit you can’t go wrong.
Sliced bread (organic and whole grain if possible)
3 scoops Earth Island®/Follow Your Heart® VeganEgg™ powder (link here)
1 1/2 cups ice cold water
3/4 cup almond milk (unsweetened)
2 Tbsp vanilla extract
EarthBalance® Buttery Spread (original)
Maple syrup (organic and Grade A light/extra light if possible)
1/Attach the butterfly whisk to your Thermomix mixing knife.
2/Select a shallow dish and place 2 (or more) slices of bread in the dish. Set aside.
3/Select a skillet; preheat the element to med-high temperature.
1/Add VeganEgg™ powder and ice cold water to your Thermomix mixing bowl. Whisk 10 sec/Speed 4
Reminder: When using the butterfly whisk attachment use a maximum speed of 4.
2/Add the almond milk and vanilla extract to your TM mixing bowl (with the butterfly whisk attachment still in place). Whisk 5 sec/Speed 4
3/Remove the butterfly whisk attachment from your Thermomix mixing knife. Remove the TM mixing bowl from the unit and pour the VeganEgg™ mixture into your shallow dish containing bread slices. Allow the break to soak in the egg mixture (each side) for up to 30 seconds.
4/Using a generous amount of butter, spread it on your preheated skillet making sure to cover the entire surface of the pan.
5/Transfer each soaked slice of bread to the skillet (ideally you can fit 2 or more slices at a time). Cook each side until the edges become golden.
Hint: I recommend adding a small dab of butter to each slice of bread prior to flipping for a more savoury flavour.
Note: VeganEgg™ requires a longer cooking time as compared to traditional dairy-based eggs, so don’t hesitate to keep these on the skillet a little longer than you normally would.
6/Drizzle each slice of bread with maple syrup. Serve hot!

Note: This recipe was made using a Thermomix appliance, however it can easily be adapted using similar food prep tools (e.g. mutli-function processor, immersion blender etc) or using a more traditional stovetop method.
