I’m always on the “hunt” for snacks the kids will not only think are awesome (aka two thumbs up) but will be happy to boast to their friends “they’re vegan too!”.
I’ve experimented with these a few times and given this week’s batch was devoured in under 24 hours, I thought I would post here.
The combination of almond and cashew butter makes for a rich, nutty flavour that is complemented by the sweetness of the chocolate chips. A note of caution that the batter is extremely sticky so arm yourself with some extra patience when making this, lol.
The payout is well worth it — soft, chewy goodness that pairs perfectly with a cup of hot tea. After all, who can’t use a good cookie break.
Quick side note and warning; many schools have very strict “nut free zone” policies so it would be best to keep these away from school lunches.

Ingredients
1 cup flour, unbleached white
1/2 cup flour, whole wheat
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup chilled almond butter
1/3 cup chilled cashew butter
1/3 cup brown sugar
1/3 cup cane sugar (white)
2 Tbsp flaxseed, ground
3/4 cup almond milk
1 tsp vanilla extract
2/3 cup semi-sweet chocolate chips
Preparation
1/Heat oven to 350F.
2/Line baking tray with parchment paper.
Plan ahead: You will need to refrigerate/chill the dough for at least 1 hour (or up to 2 days)~
Instructions
1/Combine flour, baking powder, baking soda and salt in a stainless steel bowl. Set aside.
2/Add both butters (almond & cashew) and sugars (brown & cane) to the Thermomix mixing bowl. Mix 30 sec/Speed 4. Using the spatula, scrape down the sides of the bowl.
3/Add flaxseed, milk and vanilla extract to the TM bowl. Mix 30 sec/Speed 3 (Reverse blade function)
4/Transfer reserved flour mixture to the TM bowl. Mix 30 sec/Speed 4.
5/Add chocolate chips to the TM bowl. Mix 10 sec/Speed 4 (Reverse blade function)
6/Spoon the batter onto your baking tray (I like to use an ice scream scooper). Bake for 15-18 mins. Once baked, cool on wire rack.

Note: This recipe was made using a Thermomix appliance, however it can easily be adapted using similar food prep tools (e.g. mutli-function processor, immersion blender etc) or using a more traditional stovetop method.
